Siân’s Spicy lentils with bacon(Slimming World friendly - free)
Makes 5 portions.

2Tbsp Lime Juice
3 Garlic Cloves finely chopped
1 tsp, Dried Chilli Flakes
1 tsp, Italian mixed herbs
Knorr Chicken Stock Pot (make up to 200ml)
150 g, Red Onion
2 Rashers of bacon (visible fat removed) chopped
300 g, Chestnut Mushrooms chopped
Red Pepper seeded and chopped
160 g, Green Lentils - Dry
Fry light


Method
Pre heat oven to 180 deg C
Fry the chopped bacon in fry light in an ovenproof casserole with lid
Add chopped onions, mushrooms and peppers
Add 2tbs lime juice, 3 garlic cloves finely chopped, 1 tsp dried chilli flakes, 1tsp, Italian mixed herbs.
Add 160g dried green lentils (I use lentilles vertes from Sainsbury’s) and 200ml chicken stock and give it all a good stir.
Cook for 30 minutes with the casserole covered with a lid or foil
After 30 minutes uncover and if it looks a bit dry at this stage add some water (1 or 2 tablespoons depending how dry it looks)
Cook for a further 20 minutes with the lid removed.
I added a pice of steamed cod to the top of mine for a tasty lunch!
Slimming World friendly (free) if you remove visible fat from the bacon. I used 2 rashers of streaky bacon that I had in the fridge which added 6 syns or 1 syn per serving.
With the streaky bacon it was 176 calories (plus 85 if you add 115g of steamed cod).
